Classic Strawberry Cake
You have to try that!
For the sponge cake base, beat 5 eggs with 150 g sugar and 1 packet of vanilla sugar for 5–8 minutes until very fluffy. Gently fold in 150 g flour and 1 teaspoon baking powder.
Spread the batter onto a baking tray (approx. 30 × 40 cm) lined with baking paper and bake in a preheated oven at 180°C (356°F) top and bottom heat for about 12–15 minutes. Allow to cool completely.
For the cream, whip 500 ml heavy cream with 2 tablespoons sugar and 2 packets of whipped-cream stabilizer. For a firmer consistency, add 250 g mascarpone or quark.
Spread the cream over the cooled sponge cake. Wash, trim, and slice 500–700 g fresh strawberries and distribute them evenly on top.
Refrigerate for at least one hour before serving.
Dust with powdered sugar if desired. This strawberry sponge cake slice is especially fresh and light and is a classic summer cake for coffee gatherings and guests. 🍓🍰
