You have to try that!

For a classic cream of asparagus soup for four people, you need about one kilogram of white asparagus, one liter of water, some salt and sugar, 30 grams of butter, 30 grams of flour, 100 milliliters of cream, plus pepper, lemon juice, and fresh herbs to taste. First, peel the asparagus and cut off the woody ends. Do not throw away the peels and ends, because they form the basis of an aromatic asparagus stock. To make it, boil them together with the water, some salt, and sugar for about 20 minutes, then strain the liquid.

Cut the asparagus stalks into pieces and cook them in the stock for about 10 to 15 minutes until soft. Set aside a few asparagus tips for garnish. In another pot, melt the butter, stir in the flour, and let it sweat briefly. Then gradually pour in the hot asparagus stock while stirring well so that no lumps form. Add the cooked asparagus pieces to the soup and blend everything finely. Finally, stir in the cream and season the soup with pepper and a few drops of lemon juice. Before serving, garnish with the asparagus tips and fresh herbs.
